HOGIS: 

HORECA Sustainable Gipuzkoa. Diagnosis and implementation of sustainable solutions in the HORECA sector

Objectives

The project promotes sustainable solutions in the HORECA sector through a demonstration model at the Basque Culinary Center (BCC). It seeks to validate and implement practices applicable in Gipuzkoa and, with a reverse funnel approach, and extend them to the food ecosystem of the territory.

DIAGNOSIS:

Identification of key actors, areas for improvement and areas of opportunity to implement practices.

EVALUATION:

Research, evaluate and prioritise solutions; resource management, innovation in materials, design of systems that favour reuse, etc.

DESIGN:

Development of the prioritised solution under criteria of desirability, technical feasibility and economic viability.

VALIDATION:

Testing in a relevant real environment, analysing its effectiveness, impact and potential for replicability in other contexts.

MEASUREMENT:

Assess the environmental, economic and social impact of the implemented solution by applying quantitative and qualitative methods.

DISSEMINATION:

Study the transferability of the implemented solution and generate knowledge through the socialisation of good practices.

DISCLOSURE:

Raise awareness of the Food sector, HORECA and the general public and disseminate the results of the project.

TRANSFORMATION:

To promote the sustainable transformation of the sector in Gipuzkoa so that it can play a driving role in the transition of society as a whole.

Expected results:

  • Obtain results on the current state of the HORECA channel, identifying critical points and areas for improvement.
  • Implement specific solutions that contribute to an improvement in the sustainability of the sector.
  • Reducing the environmental footprint through biodiversity protection and CC mitigation
  • Training and capacity building of relevant actors to strengthen sustainability competences
  • Improve competitiveness by introducing solutions that improve economic viability and efficiency.
  • Creating an environment capable of adapting to growing consumer demands
  • Transfer of good practices and generation of a manual based on the implemented solutions.
  • Awareness-raising actions on sustainability among industry players and the general public.
  • Positioning Gipuzkoa as a benchmark in the promotion of sustainability
